Chocolate Chip Cookies (sprouted grain)

Chocolate Chip Cookies


Ingredients:

2 ¾ c. spg flour (soft wheat best)
1 c.  oatmeal blended to coarse flour                            
1 tsp. Kosher salt (heaping)
1 Tbsp. brown sugar
¾ c. granulated sugar
12 Tbsp. unsalted butter (room temp)
1 Tbsp. Xagave
3 egg yolks
1 tsp. vanilla
2 cups dark chocolate chips

Whisk dry ingredients together.  Set aside.  

In a stand mixer, cream butter with sugars on medium speed until light and fluffy, about 3 - 5 minutes. Sugar granules should not be visible. Add Xagave and vanilla.  Continue to cream mixture. Add eggs, one at a time, blending after each.  On low speed or by hand, stir in the dry ingredients until just combined.  Stir in chocolate chips.  Do not overmix.  Dough will be stiff.

Preferred method is to form small dough balls and refrigerate over night, then bake for 10 to 13 minutes at 375°.
